Street-Style Chicken Noodles with Garlic Oil and Savory Broth

Mie Ayam Ala Gerobak (Street-Style Chicken Noodles)

Ingredients:

  • Noodles:

    • 300 grams fresh or dried noodles (fresh noodles preferred)
  • Chicken Topping:

    • 1 whole free-range chicken (or regular chicken)
    • 1 stalk lemongrass, smashed
    • A small piece of ginger, smashed
    • 3 bay leaves
    • 3 tablespoons sweet soy sauce
    • 1 tablespoon soy sauce
    • 1 teaspoon ground black pepper
    • Salt and sugar to taste
    • 100 ml water (for chicken sauce)
  • Chicken Spice Paste:

    • 8 shallots
    • 5 garlic cloves
    • 2 roasted candlenuts
    • A small piece of turmeric
  • Chicken Oil:

    • 100 ml vegetable oil
    • Chicken skin and fat
    • 3 garlic cloves, minced
  • Broth:

    • Chicken bones, head, neck, and feet
    • 1.5 liters water
    • Salt and sugar to taste
  • Garnishes:

    • Chinese mustard greens (sawi)
    • Meatballs (bakso)
    • Chopped green onions
    • Fried shallots

Instructions:

  1. Prepare the Chicken Topping:

    • Remove the chicken meat from the bones and skin, then cut it into bite-sized pieces.
    • Briefly boil the chicken pieces to remove any impurities. Discard the water and drain the chicken.
    • Heat vegetable oil in a pan.
    • Sauté the spice paste with lemongrass, ginger, and bay leaves until fragrant.
    • Add the chicken pieces to the pan and cook until they change color.
    • Season with sweet soy sauce, soy sauce, sugar, salt, and ground black pepper.
    • Pour in a little of the chicken broth and adjust the seasoning to taste. Continue cooking until the chicken is tender and the sauce has thickened.
  2. Prepare the Chicken Oil:

    • Heat a pan and add vegetable oil.
    • Add chicken skin and fat, cooking over low heat until the skin and fat are crispy and golden. Remove from the pan.
    • Add minced garlic to the pan and cook until golden and crispy. Set the garlic-infused oil aside for later use.
  3. Prepare the Broth:

    • Boil chicken bones, head, neck, and feet in 1.5 liters of water.
    • Season with salt and sugar to taste.
    • Simmer over low heat until the broth is rich and flavorful, then strain the broth to remove the solids.
  4. Assemble the Dish:

    • Cook the noodles according to the package instructions. Drain and divide them into serving bowls.
    • Ladle the hot chicken broth over the noodles.
    • Top with the cooked chicken, Chinese mustard greens, meatballs, and garnish with chopped green onions and fried shallots.
    • Drizzle some of the garlic-infused chicken oil over the top for added flavor.
