Instructions

Prepare the tomatoes:
Start by thoroughly washing the tomatoes. Cut off the top (the cap) of each tomato, leaving a thickness of about 2 cm. Set the caps aside. Using a spoon, carefully hollow out the tomatoes, making sure to remove all the seeds and pulp. This will create space for the meat filling. Lightly salt the inside of each hollowed-out tomato. -
Prepare the filling:
Peel and slice the carrots into thin matchsticks. Trim the ends of the leeks and cut them into fine rings.
Heat a non-stick skillet over medium-high heat. Add about 30g of olive oil from the total amount and sauté the leeks and carrots for 4-5 minutes, or until softened. Add the ground veal to the pan, breaking it up as it cooks. Once the meat starts to brown, pour in the white wine and let it simmer for a couple of minutes. Add the chopped tomato pulp and lower the heat to medium-low. Let the mixture cook for an additional 5-6 minutes, allowing the flavors to meld. -
Season the filling:
Add oregano, salt, and black pepper to taste. Stir well and turn off the heat. -
Stuff the tomatoes:
Carefully fill each hollowed tomato with the prepared meat mixture, pressing gently to ensure that each tomato is filled to the brim. Place the stuffed tomatoes in a baking dish. Top each tomato with its reserved cap. -
Bake:
Drizzle the remaining olive oil over the tops of the stuffed tomatoes. Cover the baking dish with foil and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes, or until the tomatoes are tender and the flavors have melded together. -
Serve:
Once baked, remove the tomatoes from the oven and let them rest for a few minutes before serving. These stuffed beef tomatoes are perfect as a main dish for lunch or dinner, offering a delightful balance of tender tomatoes and savory meat filling.
Notes
