Prepare the Filling:
- To make the stuffing for the chilies, heat oil in a pan. Once the oil is hot, add cumin seeds and asafoetida. Sauté for about 30 seconds until the cumin seeds start to splutter.

Cook the Besan:
- Add the besan (gram flour) to the pan and cook it on low heat for about 10–15 minutes, stirring occasionally to avoid burning. You’ll know it’s done when the mixture gives off a nutty aroma and the besan is lightly golden brown. Keep stirring to ensure it cooks evenly.

Season the Besan:
- Once the besan is cooked, add dry mango powder (amchur), turmeric powder, coriander powder, salt, and freshly chopped coriander leaves. Mix thoroughly, allowing the spices to cook into the besan for about 3–4 minutes. Once the mixture is well-combined and aromatic, remove from heat and set it aside to cool.

Stuff the Chilies:
- Stuff the large green chilies with the prepared besan filling. Make sure to pack them tightly but without breaking the chilies.

Fry the Stuffed Chilies:
- Heat some oil in a separate pan. Once the oil is hot, carefully add the stuffed chilies to the pan. Sprinkle a little water into the pan and cover it with a lid to help the chilies cook evenly.
- Let the chilies cook for about 10–15 minutes, turning occasionally to ensure they are evenly cooked and slightly charred on all sides.

- Once the stuffed chilies are cooked and golden, remove them from the pan. Garnish with fresh coriander leaves.
- Serve these delicious stuffed chilies with a side of Panchmel Dal, Palak Raita, and fresh phulkas (flatbreads) for a complete and flavorful meal.
