Instructions

Step 1: Prepare the Paneer Filling

  1. Heat the oil in a pan over medium heat. Once hot, add the cumin seeds and let them splutter for about 10 seconds.

  3. Add the crumbled paneer, followed by salt, coriander powder, and red chili flakes. Mix everything together and cook for about 1-2 minutes.
  4. Remove from heat and set the paneer mixture aside to cool.

Step 2: Prepare the Bottle Gourd

  1. Peel the bottle gourd (lauki) and slice off the ends. Using a spoon, hollow out the gourd carefully, removing the seeds and soft inner flesh. Ensure you leave enough space inside for the filling.
  2. In a large pot of salted water, boil the bottle gourd until it becomes tender but firm enough to hold the filling (about 10-15 minutes).
  3. Once cooked, drain and let the gourd cool to room temperature.

  5. Add the remaining paneer mixture (if any) and seeds from the bottle gourd. Cook for 5 minutes, letting the flavors blend together.
  6. Blend the mixture using a hand blender or regular blender until smooth, adding 1 cup of water to achieve a gravy-like consistency.
  7. Bring the gravy to a simmer for 2-3 minutes before adding sugar, kasuri methi, and the stuffed gourd slices.
  8. Simmer for another 3 minutes to allow the flavors to meld together.
