Spianatine with Stuffed Cherry Tomatoes, Cheese, and Arugula

Ingredients:

Spianatine (Italian flatbreads) 12 pieces
Cherry tomatoes (preferably small) 12 tomatoes
Arugula 20g
Extra virgin olive oil 25g
Grana Padano DOP (aged cheese) 10g
Pine nuts 10g
Fresh goat cheese (Caprino) 60g
Fresh goat cheese (Caprino) 100g
Chives 5g
Fine salt To taste
Freshly ground black pepper To taste
Green olives (pitted) 15g

Instructions:

  1. Prepare the Arugula Cream: Start by washing the arugula thoroughly. Place the arugula in a food processor along with pine nuts, Grana Padano, and 60g of goat cheese. Blend until you achieve a smooth, well-mixed cream. Set this mixture aside.

  2. Prepare the Cheese Cream: Finely chop the green olives. Add the chopped olives, along with a pinch of salt and freshly ground black pepper, into the remaining 100g of goat cheese. Mix thoroughly until smooth and creamy, using a spoon to help incorporate the ingredients. Set this cream aside as well.

  3. Prepare the Tomatoes: Carefully detach the cherry tomatoes from the vine and give them a good rinse. Cut off the top part (the stem end) of each tomato, keeping the tops aside as you’ll use them for decoration later. Use a small melon baller or spoon to scoop out the inside of the tomatoes, removing the seeds and pulp.

  4. Assemble the Dish: Fill two separate piping bags with the arugula cream and cheese cream. Gently pipe the arugula cream into the hollowed-out tomatoes, followed by the cheese cream on top. The layers will provide a delightful contrast in flavor and texture.

  5. Top and Garnish: Place one stuffed cherry tomato onto each spianatina. Cover the top of each tomato with the piece you previously cut off to create a cute, decorative finish. Garnish each spianatina with fresh chives to add a burst of color and flavor.

  6. Serving: Arrange the spianatine with stuffed cherry tomatoes on a serving platter, ready to be enjoyed as a fresh and flavorful appetizer. The combination of creamy cheeses, peppery arugula, and the sweet-tart cherry tomatoes makes this dish a perfect start to any meal.
