Instructions:

Prepare the Arugula Cream: Start by washing the arugula thoroughly. Place the arugula in a food processor along with pine nuts, Grana Padano, and 60g of goat cheese. Blend until you achieve a smooth, well-mixed cream. Set this mixture aside.

Prepare the Cheese Cream: Finely chop the green olives. Add the chopped olives, along with a pinch of salt and freshly ground black pepper, into the remaining 100g of goat cheese. Mix thoroughly until smooth and creamy, using a spoon to help incorporate the ingredients. Set this cream aside as well.

Prepare the Tomatoes: Carefully detach the cherry tomatoes from the vine and give them a good rinse. Cut off the top part (the stem end) of each tomato, keeping the tops aside as you’ll use them for decoration later. Use a small melon baller or spoon to scoop out the inside of the tomatoes, removing the seeds and pulp.
