Mozzarella Stuffed with Broccoli Rabe
Category: Main Dishes
Servings: 4

Ingredients

Ingredient Quantity
Mozzarella (preferably DOP) 4 balls
Broccoli rabe 200g
Fresh chili pepper 1
White bread (sliced) 30g
Garlic 1 clove
Fine salt To taste
Extra virgin olive oil To taste

Instructions

  1. Prepare the broccoli rabe: Start by trimming the tough stems from the broccoli rabe. Rinse and set aside.

  2. Sauté the vegetables: In a non-stick skillet, heat a generous drizzle of extra virgin olive oil over medium heat. Add the garlic and fresh chili pepper, letting them infuse the oil with their flavors. Once the garlic is golden, add the broccoli rabe to the pan and sauté for about 5-7 minutes, until tender. Season with a pinch of salt, then remove the garlic and chili from the pan. Transfer the broccoli rabe to a bowl and set aside.

  3. Toast the bread: Tear the white bread into small pieces with your hands. In the same skillet, toast the bread pieces, stirring them occasionally with a wooden spoon until they are golden and crispy. Once toasted, set the croutons aside.

  4. Prepare the mozzarella: Take each mozzarella ball and, using a small knife, carefully cut a cone-shaped hole in the center of each ball to create a cavity. Gently remove the inner part of the mozzarella, leaving a thin layer of cheese to form a shell.

  5. Stuff the mozzarella: Fill the hollowed mozzarella with the sautéed broccoli rabe, pressing it gently to ensure it’s packed in.

  6. Assemble the dish: Arrange the stuffed mozzarella on a serving platter. Top with the crispy croutons and a drizzle of olive oil for extra flavor.

  7. Serve and enjoy: Your Mozzarella Stuffed with Broccoli Rabe is now ready to serve. This delightful, savory dish combines the creamy texture of mozzarella with the bold flavors of sautéed broccoli rabe and the crunch of toasted bread.
