Instructions

Step 1: Preparing the Veal Roll
To begin preparing this delicious veal roll, place the veal into a large mixing bowl. Use a meat mallet to gently pound the veal to an even thickness. Once tenderized, break the meat into small crumbles using a food processor or by hand. Add finely chopped smoked pancetta, egg yolks, chopped fresh parsley, and grated Grana Padano cheese to the veal mixture. Season generously with salt and black pepper. Use your hands to mix all the ingredients together, ensuring they are well incorporated.

Step 2: Forming the Roll
Once the veal mixture is ready, take a large piece of kitchen twine and lay it flat on a clean surface. Place the veal mixture on the twine, shaping it into a compact roll. Carefully tie the ends with the twine to secure the stuffing, ensuring that the roll holds together well.

Step 3: Searing the Veal Roll
Heat 3 tablespoons of extra virgin olive oil in a large ovenproof skillet over medium-high heat. Once the oil is hot, add the veal roll to the pan and sear it on all sides until golden brown. This should take about 6-8 minutes. Be sure to turn the roll occasionally, so it gets an even sear on all sides. After the veal roll is nicely browned, deglaze the pan by pouring in the white wine. Allow the wine to simmer for a minute, letting the flavors meld together.

Step 4: Preparing the Vegetables
While the veal roll is cooking, peel and dice the potatoes into small cubes. Cut the carrots into thick slices and trim the ends of the green beans. Peel and finely slice the yellow onion. Set all the vegetables aside, ready to be added to the skillet.

Step 5: Cooking the Vegetables
In a separate pan, heat the remaining 2 tablespoons of extra virgin olive oil over medium heat. Add the sliced onions, cooking them until they become soft and translucent, about 5 minutes. Next, add the diced potatoes, carrots, and green beans. Season the vegetables with a pinch of salt and pepper, and sauté them for about 5 minutes until they are slightly golden. Once done, set them aside to cook with the veal.

Step 6: Roasting the Veal Roll
Once the veal is browned and the wine has reduced slightly, transfer the skillet with the veal roll into a preheated oven set at 180°C (350°F). Roast the veal for about 25-30 minutes or until it is cooked through and the internal temperature reaches 75°C (165°F).

Step 7: Adding the Vegetables
After the veal has been roasting for about 20 minutes, add the sautéed vegetables into the pan, surrounding the veal roll. Continue roasting everything together for the remaining cooking time. The vegetables will absorb the savory juices from the veal and wine, enhancing their flavor.

Step 8: Resting and Serving
Once the veal roll is cooked, remove it from the oven and let it rest for about 10 minutes before slicing. This ensures the juices redistribute, making the meat tender and moist. Slice the veal roll into thick rounds, serving it alongside the roasted vegetables.

Serving Suggestion:
This veal roll is perfect for a cozy family dinner or special occasion. Pair it with a side of fresh salad or some crusty Italian bread to soak up the savory juices. The rich flavor of the veal and the smokiness from the pancetta are complemented by the sweetness of the roasted vegetables, making each bite a delicious harmony of tastes.

Enjoy your homemade Arrotolato di Vitello con Verdure, an Italian classic that brings comfort and delight with every serving.
