Instructions:

  1. Prepare the Urad Dal:

    • Rinse the white urad dal thoroughly under running water to remove any dust or impurities. After washing, soak the dal in water for 4 to 5 hours to soften it. Once soaked, drain the water and set the dal aside for later use.
  2. Pressure Cook the Dal:

    • In a pressure cooker, add 1/4 cup of water and place a steamer pan inside. Transfer the soaked dal to the pan and close the lid of the pressure cooker. Cook on medium heat for about 3 whistles. Once done, turn off the gas and allow the pressure to release naturally. Open the cooker and keep the cooked dal aside.
  3. Prepare the Tempering (Tadka):

    • In a pan, heat 1 teaspoon of ghee on medium heat. Add 1 teaspoon of cumin seeds and 1/4 teaspoon of asafoetida (hing). Sauté until the cumin seeds start crackling and release their aroma.
  4. Cook the Aromatics:

    • Add 1 finely chopped onion, 1 inch of finely chopped ginger, and 1 chopped green chilli to the pan. Sauté them until the onions turn soft and translucent.
  5. Combine the Dal and Spices:

    • Add the cooked urad dal to the pan with the sautéed aromatics. Stir well to combine. Add 1/2 teaspoon turmeric powder, 1/2 teaspoon coriander powder, 1/2 teaspoon garam masala powder, and salt to taste. Mix everything thoroughly.
  6. Simmer and Enhance the Flavor:

    • Cover the pan and let the dal simmer on low heat for about 3-4 minutes, allowing the spices to blend well with the dal.
  7. Finish the Dish:

    • Squeeze the juice of one fresh lemon into the dal for a burst of citrusy freshness. Stir well to combine and adjust seasoning as needed.
  8. Garnish and Serve:

    • Garnish the Sukhi Urad Dal with freshly chopped coriander leaves. Serve hot with phulka, paratha, or a side of Gujarati Kadhi for a complete and satisfying meal.

Serving Suggestions:
Sukhi Urad Dal pairs wonderfully with Gujarati Kadhi, phulka, or parathas. The dish also complements Aamras (mango pulp) for a traditional touch. Its robust flavor and high-protein content make it an ideal dish for a wholesome lunch or dinner.

Tips:

  • You can adjust the spice level by increasing or decreasing the number of green chillies used in the recipe.
  • For a richer taste, you can use clarified butter (ghee) instead of regular oil.
  • If you prefer a creamier texture, mash the dal lightly with a spoon before serving.
