Honey (preferably wildflower) 1 tbsp
Whole hazelnuts (peeled) 65g

Instructions

  1. Prepare the Brioche:

    • Start by cutting the brioche bread into small cubes, about 1.5 cm in size.
    • Line a baking tray with parchment paper, and spread the brioche cubes and peeled hazelnuts evenly on the tray.
    • Drizzle the honey over the top and place the tray in a preheated oven. Toast the bread and hazelnuts until golden and crisp, about 10 minutes. Remove from the oven and set aside to cool.
  2. Prepare the Fruit:

    • Pit and dice the peach or nectarine into small chunks.
    • Cut the apricots into 8-9 wedges each.
    • Slice the plum into thin rounds.
    • Remove the stems from the strawberries and slice them into halves or quarters, depending on size.
    • Cut the cherries in half and remove the pits.
    • Add the blueberries whole to the mix.
  3. Assemble the Sweet Panzanella:

    • In a large mixing bowl, combine all of the prepared fruit.
    • Drizzle the fig syrup (or balsamic syrup) over the fruit and gently toss.
    • Add the toasted brioche cubes and roasted hazelnuts to the fruit bowl.
    • Tear some fresh mint leaves and sprinkle them over the mixture for added fragrance and flavor.
    • Season with a pinch of fleur de sel (or sea salt) to bring out the sweetness.
  4. Serve and Enjoy:
