Ingredients:
- 1 ear of corn
- 1 tablespoon olive oil
- 1 tablespoon sherry wine vinegar
- 1/2 teaspoon sugar
- Pinch of coarse salt
- Freshly ground black pepper, to taste
- 1 yellow tomato
- 1 tomato
- Handful of fresh basil leaves
- 1 ripe avocado
- Bibb lettuce, or arugula if preferred
- Optional: Mizithra cheese, hard ricotta salata, or Parmesan cheese, for garnish
Instructions:

- Shuck the corn and remove the husk and silk.
- Bring a pot of water to a boil and blanch the corn for 2 minutes.
- Remove the corn from the boiling water and immediately transfer it to an ice bath to stop the cooking process.
- Once cooled, carefully slice the kernels off the cob and set aside.

- In a small bowl, whisk together the olive oil, sherry wine vinegar, sugar, salt, and pepper until well combined and emulsified.
