Ingredients:

  • 1 ear of corn
  • 1 tablespoon olive oil
  • 1 tablespoon sherry wine vinegar
  • 1/2 teaspoon sugar
  • Pinch of coarse salt
  • Freshly ground black pepper, to taste
  • 1 yellow tomato
  • 1 tomato
  • Handful of fresh basil leaves
  • 1 ripe avocado
  • Bibb lettuce, or arugula if preferred
  • Optional: Mizithra cheese, hard ricotta salata, or Parmesan cheese, for garnish

Instructions:

  1. Prepare the Corn:

    • Shuck the corn and remove the husk and silk.
    • Bring a pot of water to a boil and blanch the corn for 2 minutes.
    • Remove the corn from the boiling water and immediately transfer it to an ice bath to stop the cooking process.
    • Once cooled, carefully slice the kernels off the cob and set aside.
  2. Make the Dressing:

    • In a small bowl, whisk together the olive oil, sherry wine vinegar, sugar, salt, and pepper until well combined and emulsified.
  3. Assemble the Salad:

    • In a large mixing bowl, combine the blanched corn kernels, diced yellow tomato, diced tomato, and torn basil leaves.
    • Drizzle half of the prepared dressing over the corn and tomato mixture, tossing gently to coat the ingredients evenly.
    • Peel and dice the avocado, then add it to the bowl with the corn and tomatoes. Gently fold in the avocado to avoid mashing it.
  4. Prepare the Greens:

    • In another mixing bowl, toss the bibb lettuce or arugula with the remaining dressing until evenly coated.
  5. Plate and Serve:

    • Divide the dressed lettuce among serving plates or bowls.
    • Top the lettuce with the corn, tomato, and avocado mixture, distributing it evenly.
    • If desired, sprinkle the salad with grated Mizithra cheese, hard ricotta salata, or Parmesan cheese for an extra burst of flavor.
