Spice Paste (to be blended):

  • 9 shallots
  • 3 garlic cloves
  • 9 bird’s eye chilies (cabe rawit)
  • 5 curly red chilies (cabe merah keriting)
  • ½ teaspoon candlenuts (kemiri)
  • ½ teaspoon roasted coriander seeds
  • ½ nutmeg
  • ½ teaspoon roasted cumin seeds
  • 2 cm turmeric
  • 2 cm ginger
  • ½ teaspoon black pepper

Steps:

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, bird’s eye chilies, curly red chilies, candlenuts, roasted coriander seeds, nutmeg, roasted cumin seeds, turmeric, ginger, and black pepper into a smooth paste.
  2. Cook the Beef:

    • In a large pot, boil the beef until it becomes tender. Once cooked, remove the beef from the pot and cut it into bite-sized pieces. Reserve the beef stock for later use.
  3. Sauté the Spice Paste:
