Striking Strawberry Cake Recipe

Description: 🍓 Strawberries plus strawberry gelatin added to the mix packs this cake with tons of strawberry flavor. The Cool-Whip and strawberry frosting just add to the delight!! Very easy to make, and nice to take to picnics and potlucks. I have never made this as a layer cake, but I imagine that you may have to use a bit more Cool-Whip to frost the entire outside of the cake.

Ingredients:

Ingredient Quantity
Strawberry gelatin 1 package
Eggs 1
Water 3/4 cup
Frozen strawberries 3 cups
Cool Whip 1/2 cup
Frozen strawberries 1 cup

Instructions:

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. Prepare cake batter: In a mixing bowl, beat together the strawberry gelatin, eggs, water, and 3 cups of frozen strawberries until well combined.

  3. Prepare cake pan: Grease and flour a 9×13-inch cake pan.

  4. Pour batter: Pour the prepared cake batter into the greased and floured cake pan, ensuring it spreads evenly.

  5. Bake: Place the cake pan in the preheated oven and bake for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  6. Make frosting: While the cake is baking, prepare the frosting by folding 1 cup of frozen strawberries into the Cool Whip until well mixed.

  7. Cool the cake: Once the cake is baked, remove it from the oven and allow it to cool completely.

  8. Frost the cake: Once cooled, spread the strawberry and Cool Whip frosting evenly over the top of the cake.

  9. Refrigerate: Place the frosted cake in the refrigerator until ready to serve. Chilling helps set the frosting and enhances the flavor.

  10. Serve: When ready to serve, slice the cake into squares and enjoy the delicious, refreshing taste of this striking strawberry cake!

Note: This cake can also be prepared as a layer cake by baking in two 9-inch cake pans, spreading a thin layer of frosting between layers, then frosting the outside of the cake with the remaining frosting. Adjust the amount of Cool Whip accordingly for frosting the entire outside of the cake.
