Tumis Kikil / Cow Foot Stew with Sundanese Flavors

Indulge in the savory goodness of Tumis Kikil, a traditional Sundanese cow foot stew that combines rich, hearty flavors with a tantalizing blend of spices. This dish, also known for its unique texture and delicious taste, is perfect for a comforting meal. Here’s how you can recreate this delightful recipe at home.

Ingredients:

  • 600 grams of cow foot (kikil) – previously purchased as 1.5 kg, used in making mie kocok
  • Water, as needed
  • 3 cloves of garlic, minced
  • 3 shallots, finely chopped
  • 1 cm turmeric, sliced thinly
  • 1 onion, chopped
  • A handful of green onions (daun bawang), chopped
  • 3 stalks of lemongrass, crushed
  • 2 cm ginger, crushed
  • Brown sugar, to taste
  • Salt, to taste
  • Sweet soy sauce (kecap manis), to taste
  • 1 sachet oyster sauce
  • Cooking oil, for sautéing

Instructions:

  1. Prepare the Cow Foot:

    • In a large pot, bring water to a boil. Add the cow foot and cook briefly to remove any impurities. Once cleaned, drain and rinse the cow foot thoroughly under cold water.
    • Refill the pot with fresh water, bring to a boil again, and simmer the cow foot for approximately 30 minutes. Add the crushed lemongrass to infuse additional flavor. Set aside.
  2. Sauté the Aromatics:

    • Heat a generous amount of cooking oil in a pan over medium heat. Add the minced garlic, chopped shallots, sliced turmeric, and chopped onion. Sauté until the mixture becomes fragrant and the onions turn golden brown.
  3. Combine Ingredients:

    • Add the pre-cooked cow foot and its broth into the pan with the sautéed aromatics. If needed, add extra water to ensure the cow foot is covered and to achieve the desired consistency.
    • Stir in the brown sugar, salt, oyster sauce, and sweet soy sauce. Adjust the seasoning with pepper to taste.
  4. Simmer and Finish:

    • Allow the mixture to simmer until the cow foot becomes tender and absorbs the flavors, stirring occasionally. This may take some time, depending on the tenderness of the cow foot.
    • Once the liquid has reduced and the flavors are well incorporated, add the chopped green onions. Stir to combine and cook for a few more minutes until the green onions are slightly wilted.
  5. Serve:

    • Serve the Tumis Kikil hot, accompanied by pickled pineapple and cucumber for a refreshing contrast.
