Ingredients:

  • 4 Whole Eggs
  • 1 tablespoon Oil
  • 1 Onion, finely chopped
  • 2 cups Homemade Tomato Puree
  • 1 teaspoon Red Chilli Powder (adjustable)
  • 1/4 teaspoon Turmeric Powder (Haldi)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/4 cup Coconut Milk (thick consistency)
  • A small bunch of Coriander (Dhania) Leaves, finely chopped (for garnish)
  • Salt, to taste

Preparation Time: 20 minutes
Cook Time: 15 minutes

Instructions:

  1. Prepare the Masala:
    Heat oil in a pan over medium heat. Once hot, add the finely chopped onion and sauté until soft and translucent, about 2 minutes.

  2. Spice It Up:
    Add the red chilli powder, turmeric powder, coriander powder, and salt. Sauté the spices for another 2-3 minutes, ensuring the powders blend well with the onions.

  3. Tomatoes & Gravy:
    Stir in the homemade tomato puree, and cook covered for 5 minutes to allow the flavors to meld.

  4. Coconut Milk:
    Add coconut milk and stir well. Reduce heat to low and allow the curry to simmer, bringing the mixture to a gentle boil. Adjust the consistency with water if needed and continue to simmer for another 5 minutes.

  5. Add the Eggs:
    Carefully break the eggs directly into the gravy, spacing them out in four different spots. Sprinkle some salt on the yolks. Cover the pan and cook for 8-10 minutes, or until the eggs reach your preferred consistency.

    • For a half-cooked yolk, reduce the cooking time to 6 minutes.
    • For a runny yolk, cover and cook for just 4 minutes or until the egg whites are fully cooked, and a thin film forms over the yolk.
  6. Garnish & Serve:
    Once the eggs are cooked to your liking, garnish the curry with fresh coriander leaves. Serve hot.
