Ingredients:

Shortbread Crust:

  • 1 1/2 cups flour
  • 1/2 cup pecans
  • 1/3 cup sugar
  • 1 egg
  • 1/2 cup butter

Cranberry Glaze Filling:

  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 can whole berry cranberry sauce
  • Zest of 1 lemon
  • Juice of 1 lemon

White Chocolate Filling:

  • 2 packages cream cheese
  • 1 cup sugar
  • Zest of 1 orange
  • 1/2 cup Crantasia
  • 3 tablespoons reduced orange juice
  • 8 ounces white chocolate
  • 4 eggs

Candied Oranges Topping:

  • 4 seedless oranges
  • 3 cups water
  • 2 cups sugar

Step Details
1 Shortbread Crust: Preheat the oven to 400°F (200°C). Mix flour, pecans, and sugar on a pastry board. Create a well in the center and add egg yolk and softened butter. Blend until thoroughly mixed. Shape into a ball, wrap in plastic, and chill for at least 10 minutes. Roll out the dough between waxed paper to 1/4-inch thickness and line a 9-inch springform pan. Bake for 15-20 minutes until light brown. Let it cool. Use leftover dough to line the sides of the pan.
2 Brush the shell with reserved egg white and set aside.
3 Cranberry Glaze Filling: In a saucepan, mix sugar and cornstarch. Stir in cranberry sauce and cook over medium heat until thick. Add lemon zest and juice. Set aside to cool slightly.
4 White Chocolate Filling: Boil orange juice and peel until reduced to 3 tablespoons. Discard the peel. Beat cream cheese, sugar, orange zest, Crantasia, and reduced orange juice until smooth. Add melted white chocolate and eggs, beating until combined. Pour cranberry filling into crust, then white chocolate filling. Bake at 350°F (180°C) for about 50 minutes until set. Cool to room temperature, then chill overnight.
5 Candied Oranges Topping: In a skillet, combine water and sugar. Simmer until sugar dissolves, then add orange slices. Cook for 2 hours until translucent. Drain and arrange on a rack to dry for 1 hour. Boil syrup until thick.
6 Remove cheesecake from the springform pan and arrange candied oranges on top. Brush with syrup. Serve and enjoy!
