Lemon Meringue Pie Recipe

Ingredients:

  • 1 1/2 cups plain flour
  • 3 tablespoons icing sugar
  • 140g butter
  • 1 tablespoon water
  • 2 tablespoons cornflour
  • 1/2 cup caster sugar
  • 1 cup lemon juice
  • 1/2 cup water
  • 1 1/4 tablespoons fresh lemon rind
  • 2-3 tablespoons unsalted butter
  • 3 egg yolks
  • 60g caster sugar (for meringue)
  • 3 egg whites

Instructions:

  1. Prepare the Pastry:

    • Sift the flour and icing sugar into a bowl.
    • Rub in the butter until the mixture resembles breadcrumbs.
    • Add the egg yolk and enough water to make the ingredients cling together.
    • Press the dough into a ball and knead lightly on a floured surface until smooth.
    • Cover and refrigerate for 30 minutes.
    • Roll the dough out on a lightly floured surface, large enough to line a 24cm flan tin.
    • Lightly grease the tin before placing the pastry dough in it.
    • Line the pastry with baking paper and fill with rice or beans to weigh it down.
    • Bake in a preheated moderately hot oven (210-230°C) for 10 minutes.
    • Remove the paper and rice/beans and bake for a further 10 minutes or until lightly browned.
    • Cool to room temperature.
  2. Prepare the Filling:

    • Combine cornflour and sugar in a pan.
    • Gradually stir in lemon juice and water until smooth.
    • Stir over heat until the mixture boils and thickens.
    • Reduce the heat and quickly stir in grated lemon rind, egg yolks, and butter until melted.
    • Cover and cool to room temperature.
  3. Prepare the Meringue:

    • Beat egg whites until soft peaks form.
    • Gradually add caster sugar, beating well until sugar is dissolved.
  4. Assemble and Bake:

    • Spread the cooled filling into the pastry case.
    • Spread the meringue on top of the filling, making sure it covers the edge of the pastry case to prevent it from sliding.
    • Bake in a preheated moderate oven (180-200°C) for about 5 minutes or until the meringue is lightly browned.
