  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar

  • 2/3 cup milk

1 Preheat oven to 425°F.
2 Sift dry ingredients into a mixing bowl.

4 Stir in almost all of the milk.
5 If the dough seems stiff, gradually add the remaining milk, using just enough to make a soft, puffy dough that is easy to roll out.
6 Knead quickly on a lightly floured board (avoid overhandling to prevent tough biscuits).
7 Roll out the dough to 1/4-inch thickness for thin, crusty biscuits or 1/2-inch thickness for thicker biscuits.
8 Place the biscuits on an ungreased cookie sheet, positioning them close together for softer-sided biscuits or an inch apart for biscuits with crusty sides.
9 Bake for 10 to 12 minutes until golden brown.
