Instructions:

Step 1: Preparing the Curry Base

  1. Begin by preparing the curry base. In a mixer jar, combine tomatoes, ginger, green chili, and mint leaves (pudina) with a little water. Grind everything to a smooth puree.
  2. Heat a kadai (wok) on medium flame and add cumin seeds (jeera). Once they begin to crackle, add the prepared tomato-pudina puree to the pan.
  3. Stir the puree for a couple of minutes to allow the raw tomato taste to cook off.
  4. Add the dry masalas—cumin powder, garam masala, salt, and a pinch of sugar—into the curry and stir well.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 4 to 5 minutes, allowing the curry to thicken and the flavors to meld together.
  6. Taste the curry and adjust salt and spices if necessary. Turn off the heat and set the curry base aside.

Step 2: Preparing the Suran Koftas

  1. Wash, peel, and dice the elephant yam (suran). Place the diced yam in a pressure cooker, add ¼ cup of water, and cook for 4 whistles. Turn off the heat and let the pressure release naturally.
  2. Once the pressure has released, open the cooker and drain any excess water. Transfer the yam into a mixing bowl and mash it using a potato masher until smooth and lump-free.
  3. To the mashed yam, add the gram flour (besan), finely chopped green chili, ginger, and salt. Mix everything thoroughly to form a smooth, cohesive dough.
  4. Shape the mixture into small balls (koftas) using your hands. Ensure the koftas are smooth and firm to hold their shape during cooking.

Step 3: Cooking the Koftas

  1. Heat a paniyaram pan (or any non-stick pan with cavities) on medium heat. Add a little oil into each cavity.
  2. Once the oil is hot, gently place the suran koftas into the pan and cook them, turning them occasionally, until they are golden brown and crisp on all sides.
  3. Carefully flip each kofta to ensure even cooking. Once golden and crispy, remove them from the pan and set aside.

Step 4: Combining the Koftas with the Curry

  1. Add the prepared suran koftas into the simmering tomato gravy. Let them soak in the curry for 5 minutes, allowing the flavors to meld together.
  2. Once the koftas have absorbed the curry and softened slightly, the dish is ready to be served.
