Lou’s Chinese Pork Recipe

Prep Time: 2 days
Cook Time: 1 hour 15 minutes
Total Time: 2 days 1 hour 15 minutes
Servings: 10

Ingredients:

  • 4 pounds of boneless pork ribs 🥩
  • 3 cloves of garlic, peeled 🧄
  • 1/2 cup of hoisin sauce 🍶
  • 1/3 cup of ketchup 🍅
  • 1/3 cup of brown sugar 🍬
  • 1/3 cup of soy sauce 🍜

Instructions:

  1. Prepare the Marinade: Start by peeling the garlic cloves and dropping them into a blender or food processor. Add the soy sauce, brown sugar, ketchup, and hoisin sauce. Blend the mixture until the sugar is completely dissolved and the garlic is finely processed.

  2. Marinate the Pork: Cut the boneless pork ribs into approximately 5-inch sections if they are too long. Place the pork pieces in a large, resealable plastic bag or a covered bowl. Pour the marinade over the pork, ensuring all pieces are well-coated. Seal the bag or cover the bowl, and let the pork marinate in the refrigerator for 2 days, turning every 8 hours to ensure even flavor distribution.

  3. Prepare the Hooks: While the pork is marinating, you’ll need to prepare some special hooks for hanging the pork. Cut coat hangers into manageable lengths and form them into S-shaped hooks. Create a small U-shaped loop at one end to fit your oven rack and a larger loop at the other end to hold the pork. The shaft of each hook should be about 3 inches long.

  4. Season the Hooks: Heat the hooks over high heat until they are glowing red. Carefully place the hot hooks into cold water to burn off any paint. You may need to repeat this process to completely remove the paint. Once cooled, lightly oil the hooks and store them in an old jar.

  5. Prepare the Oven: Position an oven rack at the highest position and remove any other racks from the oven. Line a baking pan with aluminum foil and fill it with water, placing it on the bottom of the oven. This will catch any drips and help keep the pork moist during cooking.

  6. Hang and Cook the Pork: Remove the marinated pork from the refrigerator. Hang each piece of pork on the prepared hooks. Place the rack with the hanging pork in the oven. Set the oven temperature to 350°F (175°C). Once the oven reaches the set temperature, start the timer and cook the pork for 1 hour.

  7. Finish and Serve: After cooking, carefully remove the pork from the oven. Let it rest for a few minutes before serving. The result should be tender, flavorful pork with a beautiful caramelized exterior. Serve with steamed rice or your favorite vegetables to complete the meal.

Notes:

  • Safety Tip: Be cautious when working with the hot hooks and ensure that they are completely cool before handling.
  • Oven Preparation: The foil-lined pan of water helps to prevent excessive smoke, but be prepared for some smoke. It’s a good idea to take out the batteries from your smoke alarm during cooking and remember to replace them afterward.

Enjoy this exquisite blend of Chinese flavors with a delightful twist of American ingenuity! Lou’s Chinese Pork is a perfect dish for gatherings, family dinners, or any occasion that calls for a bit of culinary adventure. 🍽️🥢
