Grilled Pomfret (Bawal Bakar)
Ingredients:
- 1 kg fresh pomfret (cleaned and gutted)
- For the Marinade:
- 1 packet of tempe seasoning mix
- 5 tablespoons sweet soy sauce
- 2 tablespoons tomato sauce
- 2 tablespoons honey
- 2 tablespoons cooking oil
Instructions:
-
Prepare the Fish:
- Begin by thoroughly cleaning and gutting the pomfret. Make several diagonal slashes on each side of the fish to allow the marinade to penetrate and enhance the flavor.
-
Marinate the Fish:
- In a mixing bowl, combine the tempe seasoning mix, sweet soy sauce, tomato sauce, honey, and cooking oil. Stir well to create a uniform marinade.
- Rub the marinade all over the fish, ensuring it gets into the slashes and covers every part of the pomfret. Allow the fish to marinate for about 1 hour. This step is crucial as it lets the flavors infuse into the fish.
-
Grill the Fish:
- Preheat your grill pan or prepare your charcoal grill. If using a grill pan, heat it over medium-high heat. For a charcoal grill, ensure the coals are hot and have a consistent flame.
- Place the marinated fish on the grill. Cook each side for about 5-7 minutes, or until the fish is thoroughly cooked and has a nice, golden-brown crust. The fish is done when it flakes easily with a fork and has reached an internal temperature of 145°F (63°C).
-
Serve:
- Once grilled to perfection, remove the fish from the grill and let it rest for a few minutes. Serve warm and enjoy your delicious grilled pomfret.
This simple yet flavorful recipe makes for a delightful meal, perfect for any gathering or a special dinner. The combination of sweet and savory marinade complements the delicate taste of the pomfret, making it a hit with everyone.
