Grilled Pomfret (Bawal Bakar)

Ingredients:

  • 1 kg fresh pomfret (cleaned and gutted)
  • For the Marinade:
    • 1 packet of tempe seasoning mix
    • 5 tablespoons sweet soy sauce
    • 2 tablespoons tomato sauce
    • 2 tablespoons honey
    • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Fish:

    • Begin by thoroughly cleaning and gutting the pomfret. Make several diagonal slashes on each side of the fish to allow the marinade to penetrate and enhance the flavor.
  2. Marinate the Fish:

    • In a mixing bowl, combine the tempe seasoning mix, sweet soy sauce, tomato sauce, honey, and cooking oil. Stir well to create a uniform marinade.
    • Rub the marinade all over the fish, ensuring it gets into the slashes and covers every part of the pomfret. Allow the fish to marinate for about 1 hour. This step is crucial as it lets the flavors infuse into the fish.
  3. Grill the Fish:

    • Preheat your grill pan or prepare your charcoal grill. If using a grill pan, heat it over medium-high heat. For a charcoal grill, ensure the coals are hot and have a consistent flame.
    • Place the marinated fish on the grill. Cook each side for about 5-7 minutes, or until the fish is thoroughly cooked and has a nice, golden-brown crust. The fish is done when it flakes easily with a fork and has reached an internal temperature of 145°F (63°C).
  4. Serve:

    • Once grilled to perfection, remove the fish from the grill and let it rest for a few minutes. Serve warm and enjoy your delicious grilled pomfret.
