Ingredients:

- 1.6 kg chicken, cut into pieces
- 5 cloves garlic
- 5 shallots
- 5 curly red chilies
- 1-inch piece of ginger
- 1-inch piece of galangal
- 1 small packet of shrimp paste
- Coriander
- Black pepper
- Palm sugar
- Salt, to taste
- 1 tablespoon oil (just enough to coat the skillet)
- Water, as needed for simmering the chicken
- 3 tablespoons soy sauce
- 3 tablespoons honey
