Bacem Tahu Tempe: A Delightful Indonesian Classic
Ingredients:
- 1 block of tofu
- 1 block of tempeh
- 7 shallots
- 4 cloves of garlic
- 1 piece of palm sugar (gula merah)
- 1 teaspoon coriander seeds (ketumbar)
- 2 tamarind pods (asam jawa)
- 1 teaspoon salt
- 2 tablespoons soy sauce (kecap manis)
- 1 teaspoon seasoning powder (masako)
- 1 piece of galangal, crushed (lengkuas)
Instructions:
-
Prepare the Tofu and Tempeh: Cut the tofu and tempeh into bite-sized pieces. Heat oil in a frying pan and fry the tofu and tempeh until golden brown and crispy. Set aside on paper towels to drain excess oil.
-
Prepare the Spice Paste: In a blender or food processor, combine the shallots, garlic, and coriander seeds. Blend into a smooth paste.
-
Cook the Spice Paste: In a pan, heat a little oil over medium heat. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste.
-
Add Flavorings: Slice the palm sugar and add it to the pan, along with the tamarind pods, salt, soy sauce, and seasoning powder. Stir to combine and cook for a few minutes until the sugar is melted and everything is well mixed.
-
Simmer the Tofu and Tempeh: Add water to the pan to create a sauce and bring it to a simmer. Add the fried tofu and tempeh pieces to the pan, stirring gently to coat them with the spice mixture.
-
Reduce the Sauce: Allow the mixture to simmer gently until the sauce has reduced and thickened, and the tofu and tempeh have absorbed the flavors.
-
Final Touches: Once the sauce has almost evaporated and the tofu and tempeh are well coated, remove from heat.
-
Serve: Transfer the Bacem Tahu Tempe to a serving dish and enjoy it warm.
This traditional Indonesian dish, Bacem Tahu Tempe, is a flavorful combination of tofu and tempeh simmered in a rich, sweet, and savory sauce. Perfect as a side dish or a main course, it offers a delicious taste of Indonesian cuisine.
