Ingredients:

  • 500 grams (1/2 kg) fatty beef (such as beef used for Rawon)
  • 6 cloves garlic
  • 2 candlenuts
  • 1 tablespoon whole coriander seeds
  • 1 tablespoon salt
  • 1/4 teaspoon whole black pepper
  • 1/2 teaspoon white sugar
  • 1 tablespoon sweet soy sauce
  • 3 cm galangal, sliced
  • 100 ml water

Instructions:

  1. Prepare the Beef:

    • Slice the beef into pieces that are approximately 2 finger widths in thickness, width, and length. This ensures even cooking and a pleasing texture in the finished dish.
  2. Blend the Spices:

    • In a blender or food processor, combine the garlic, candlenuts, whole coriander seeds, salt, and black pepper. Blend until the mixture forms a smooth paste. This spice blend will create the flavorful base of the dish.

    • Heat a small amount of oil in a pan over medium heat. Add the spice paste and sliced galangal. Sauté until the spices are fragrant and the mixture is well-cooked, taking care not to burn it.
