  • 1 large onion (chopped)
  • 1 cup of red wine
  • 1 cup of water
  • 4 ripe peaches
  • Juice of 1 lime
  • 1/4 cup of fresh cilantro (chopped)
  • 1/4 cup of fresh parsley (chopped)

Preparation

  1. Prepare the Lamb: Begin by placing the lamb chunks into a 12-inch skillet. For best results, use a cast iron skillet if available. Turn the heat to medium-high.

  2. Season and Simmer: Season the lamb generously with salt. Add the cinnamon sticks, ground cinnamon, cayenne pepper, chopped onion, and red wine to the skillet. Pour in the water. Bring the mixture to a boil, then cover the skillet and adjust the heat so that the mixture simmers steadily.

  3. Cook the Lamb: Allow the lamb to cook for 1 to 1 1/2 hours. Stir the mixture every 15 minutes or so, and check for the consistency. If the mixture seems to be drying out, add a little more water. Reduce the heat if necessary to prevent burning. The lamb is done when it feels tender when pierced with a sharp knife.

  4. Finish the Lamb: Once the lamb is tender, remove the cinnamon sticks and onion from the skillet. Increase the heat to medium-high and cook off any remaining liquid, allowing the lamb to brown slightly.

  5. Prepare the Peaches: While the lamb is finishing, cut the peaches in half and remove the pits. Slice each peach half into 12 or 16 wedges.

  6. Add Peaches to the Skillet: Stir the peach wedges into the lamb mixture. Continue cooking for about 5 minutes, gently tossing or stirring until the peaches are glazed and tender, but still hold their shape.

  7. Season and Garnish: Stir in the lime juice and most of the chopped cilantro and parsley. Taste the dish and adjust the seasonings as needed.

  8. Serve: Garnish with the remaining cilantro and parsley. Serve the lamb and peaches hot, enjoying the delightful blend of flavors.
