Ingredients:

Ingredient Quantity
Sabudana (Tapioca Pearls) 1/2 cup
Raw Peanuts (Moongphali) 1 cup
Cashew nuts 15-20 nuts
Raisins 15-20 pieces
Curry leaves 8-10 leaves
Sunflower oil (for frying) As required
Rock Salt 1 teaspoon
Powdered Sugar 1 tablespoon
Whole Black Peppercorns (ground) 1/2 teaspoon

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 2

Cuisine: Indian

Course: Snack

Diet: Vegetarian

Instructions:

  1. Heat the Oil:
Begin by heating oil in a Kadai (deep frying pan). To check if the oil is at the right temperature, drop a single sabudana pearl into the oil. If it rises to the surface quickly, the oil is ready for frying.

  2. Fry the Sabudana:
Add the sabudana pearls to the hot oil. Allow them to fry for a couple of minutes until they puff up, but be cautious not to change their color. Once puffed, remove the sabudana from the oil and transfer them to a plate lined with paper towels to absorb excess oil.

  3. Fry the Peanuts:
In the same oil, fry the raw peanuts. Stir occasionally and fry until they turn golden brown. Be careful not to over-fry them, as they may become bitter. Once done, remove the peanuts and place them on the same paper towel as the sabudana to drain excess oil.

  4. Fry the Cashews:
In a shallow pan, heat a few drops of oil and add the cashews. Shallow fry them until they turn golden brown. Transfer them to the same plate with the sabudana and peanuts.

  5. Fry the Raisins:
In the same pan, add the raisins and stir them in the oil until they puff up. Once they are puffed, transfer them to the plate with the other fried ingredients.

  6. Prepare the Curry Leaves and Chilies:
Wash and dry the curry leaves thoroughly. In the same shallow pan, sauté the curry leaves and chopped green chilies until they become crisp. Remove them from the pan and add them to the plate.

  7. Combine the Ingredients:
Once all the ingredients have cooled down slightly, transfer them to a large mixing bowl. Add the powdered sugar, rock salt, and ground black pepper. Toss everything together gently, making sure all the ingredients are well combined and coated with the seasonings.

  8. Cool and Store:
Let the Sabudana Khatti Meethi Namkeen cool to room temperature. Once cooled, transfer it to an airtight container for storage. This namkeen can stay fresh for a few days, allowing you to enjoy it whenever hunger strikes.
