Ingredients

  • Tempeh (sliced)
  • Tofu (cubed)
  • Palm sugar (gula merah), chopped
  • Salt
  • Sweet soy sauce (kecap manis) – optional
  • For the spice paste:
    • Shallots (bawang merah)
    • Garlic (bawang putih)
    • Coriander seeds (ketumbar)
  • For additional flavor:
    • Galangal (lengkuas), bruised
    • Lemongrass (sereh), bruised
    • Bay leaves (daun salam)

Instructions

  1. Prepare the Ingredients: Slice the tempeh and cube the tofu. Set aside.

  2. Make the Spice Paste: In a blender or food processor, combine the shallots, garlic, and coriander seeds. Blend into a smooth paste.

  3. Prepare the Braising Liquid: In a large pot, add enough water to cover the tempeh and tofu. Stir in the spice paste until well combined.

  4. Add Sweetener and Seasoning: Once the spice paste is well-mixed into the water, add the chopped palm sugar, salt, and optional sweet soy sauce. Stir until the sugar is dissolved.

  5. Cook the Tempeh and Tofu: Add the tempeh and tofu to the pot, ensuring they are fully submerged in the liquid. Add the bruised galangal, lemongrass, and bay leaves.

  6. Simmer: Allow the mixture to simmer on low heat, adjusting the seasoning as needed. Continue to cook until the liquid has reduced and the flavors have melded, and the tempeh and tofu have absorbed the braising liquid.

  7. Finish and Store: Once the liquid has nearly evaporated and the tempeh and tofu are well-coated with the aromatic glaze, remove them from the heat. You can either fry them immediately or let them cool and store in the refrigerator for later use.
