Teriyaki Chicken Recipe

Ingredients

  • 2 pieces of chicken thighs (cleaned, squeezed with lime juice, and cut into pieces)
  • 1 lime
  • 1 tablespoon cornstarch, dissolved in a little water
  • 3 tablespoons teriyaki sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon black pepper
  • 1 piece of ginger, smashed
  • Salt, to taste
  • Water, as needed

For the Garnish:

  • 2 onions, sliced
  • 3 cloves garlic, chopped coarsely
  • 1 red bell pepper, sliced (or use large red chili pepper)
  • 1 green bell pepper, sliced (or use large green chili pepper)

Instructions

  1. Prepare the Chicken:

    • In a bowl, combine the chicken pieces with lime juice and let them marinate briefly. This will add a refreshing zest and help tenderize the meat.
  2. Cook the Aromatics:

    • Heat a pan over medium heat and add a splash of oil. Sauté the garlic and part of the sliced onions until fragrant and golden brown.
  3. Add the Chicken:

    • Introduce the marinated chicken to the pan. Cook until the chicken starts to brown and changes color.
  4. Season the Chicken:

    • Pour in the teriyaki sauce, oyster sauce, black pepper, and add the smashed ginger. Stir well to coat the chicken evenly.

  6. Add Vegetables:

    • Mix the cornstarch with a small amount of water to form a slurry. Pour this mixture into the pan, stirring quickly to thicken the sauce.
  8. Adjust the Seasoning:

    • Taste and adjust the seasoning with salt or additional pepper if needed.
  9. Serve:

    • Once the sauce has thickened and the chicken is cooked through, remove from heat. Serve the Teriyaki Chicken hot with steamed rice or your preferred side dish.
