Ingredients:

  • 1 large can of mackerel
  • 3 large shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 inches galangal, bruised
  • 3 large red bird’s eye chilies
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 100 cc water
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato sauce
  • 2 stalks green onions, sliced

Instructions:

  1. Prepare the Aromatics: Heat the vegetable oil in a pan over medium heat. Sauté the shallots, garlic, tomato sauce, and galangal until they release a fragrant aroma.
  2. Add the Mackerel: Carefully add the canned mackerel, water, sugar, and salt to the pan. Stir gently to combine the ingredients.
