Ingredients:
- 1/2 kg Lemons (thin-skinned variety), cut into wedges
- 1 cup Sugar
- Salt, to taste
- 7 tablespoons Red Chilli Powder (adjust to preference)

Cook Time: 15 minutes
Instructions:
- Wash the lemons thoroughly and wipe them dry with a clean cotton cloth, ensuring there’s no moisture left.
- Cut the lemons into wedges and remove the seeds carefully.
- In clean, dry, sterile bottles, add the sugar and salt. Shake well to mix.
- Add the lemon wedges to the bottles and shake again to coat them with the sugar and salt mixture.
- Seal the bottles tightly and place them in direct sunlight for 10 to 15 days. If sunlight is unavailable, leave the bottles indoors for 25 to 30 days. The lemons will soften in their juices over time.
- After 25 to 30 days, transfer the softened lemons and their juices into a hot saucepan. Bring it to a boil and let it cook for 3 minutes.
- Add the red chilli powder and stir well. Cook for another minute, then turn off the heat.
- Let the mixture cool completely.
- Transfer the pickle into clean, dry, sterile bottles.
- Store the pickle in a cool, dry place. If stored properly, this pickle can last up to a year. Always use clean, dry spoons when serving to maintain its freshness.
