Sweet and Sour Rabbit Stew (Stufato di Coniglio in Agrodolce)

Instructions

  1. Prepare the Rabbit: Begin by flouring the rabbit pieces thoroughly. In a large pan, heat 8 tablespoons of extra virgin olive oil over medium heat. Brown the rabbit pieces in batches, ensuring that each piece is seared on all sides to lock in the flavors. Once browned, set the rabbit aside in a bowl.

  2. Make the Sofritto: Peel and finely chop the carrots, then wash and chop the celery stalks. In a deep pan (preferably cast iron), heat a small amount of olive oil. Add the borettane onions, the carrot and celery mixture, and the bay leaves. Sauté over low heat for approximately 10 minutes until the vegetables are tender and lightly caramelized.

  3. Prepare the Sweet and Sour Sauce: In a bowl, mix together the Worcestershire sauce, white wine vinegar, sugar, ground cinnamon, and tomato pulp. Stir until the sugar has dissolved and the mixture is well combined.

  4. Combine Ingredients: Once the onions and vegetables are well softened, add the browned rabbit pieces back into the pan. Pour the sweet and sour sauce you prepared earlier over the rabbit. Stir gently to coat the meat evenly with the sauce.

  5. Simmer and Cook: Add water to the pan, just enough to cover the rabbit. Bring to a simmer, then cover the pan with a lid. Let the stew cook for about 1 to 1.5 hours, or until the rabbit is tender and the flavors are well melded together. Check occasionally, adding more water if needed.

  6. Finishing Touches: Once the stew is ready, sprinkle with fresh wild fennel for an aromatic, herbal note. Season with salt and black pepper to taste, adjusting the sweetness or acidity by adding more sugar or vinegar if necessary.
