Sweet and Sour Fried Eggs (Telur Ceplok Asam Manis)

Ingredients:

  • 6 large eggs, fried sunny-side up
  • 1/2 medium carrot, julienned
  • 1/2 large onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon oyster sauce
  • 3 tablespoons ketchup
  • Sugar and salt, to taste
  • 250 ml water
  • 1 teaspoon cornstarch, dissolved in a small amount of water

Instructions:

  1. Heat a pan over medium heat and sauté the minced garlic and sliced onion until they become fragrant and translucent.

  2. Add the julienned carrot to the pan and stir-fry for a few minutes until the carrot starts to soften.

  3. Pour in the water (about 250 ml) and bring it to a simmer. This will create a flavorful base for the sauce.

  4. Stir in the ketchup, oyster sauce, sugar, and salt. Adjust the seasoning according to your taste preferences. Allow the mixture to simmer gently.

  5. Once the flavors have melded together and the sauce is well-seasoned, add the cornstarch mixture to the pan. Stir continuously until the sauce thickens.

  6. Gently place the fried eggs into the sauce, ensuring they are well coated. Let them simmer in the sauce for a few minutes, allowing the flavors to meld and the eggs to absorb some of the sauce.

  7. Remove from heat and serve the sweet and sour fried eggs immediately. Enjoy this delightful dish with steamed rice or as a tasty accompaniment to your meal.
