Sweet and Sour Tilapia
Ingredients:

For the Tilapia:
- 3 pieces of tilapia
- 2 tablespoons vinegar or lime juice
- A pinch of salt
- Ground pepper
- Royco seasoning (or any all-purpose seasoning)
- Oil for frying

For the Spice Paste:
- 6 shallots
- 3 cloves garlic
- 4 red chilies
- 3 bird’s eye chilies
- 1 tomato
- 1 spring onion, sliced
- 1/2 onion, sliced

For the Sauce:
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons ketchup
Instructions:

Prepare the Tilapia:
- Marinate the tilapia pieces with vinegar (or lime juice) and a pinch of salt for about 5 minutes. This step will help to tenderize the fish and infuse it with flavor.
- Heat oil in a pan and fry the marinated tilapia until golden brown and cooked through. Set aside on a plate lined with paper towels to drain excess oil.

Prepare the Spice Paste:
- While the fish is frying, blend the shallots, garlic, red chilies, bird’s eye chilies, and tomato into a smooth paste.

Cook the Sauce:
- In a separate pan, heat a little oil and sauté the sliced onion until translucent.
- Add the blended spice paste to the pan and cook until fragrant and the oil starts to separate from the paste.
- Stir in the soy sauce, oyster sauce, and ketchup. Mix well and cook for a few minutes to blend the flavors.

Combine and Finish:
- Pour in a little water to adjust the consistency of the sauce as desired.
- Season with Royco seasoning and ground pepper to taste. Allow the sauce to simmer until it thickens slightly.
- Add the sliced spring onion towards the end of cooking.

- Arrange the fried tilapia on a serving dish and pour the prepared sauce over the top.
- Garnish with additional spring onions if desired.
