Sweet and Spicy Stir-Fried Beef Tendons

Ingredients:

  • 500 grams of beef tendons (cut into rectangular pieces about 1 cm)
  • 5 shallots
  • 3 cloves of garlic
  • 2 large green chilies
  • 2 large red chilies
  • 5 bird’s eye chilies
  • 1 tomato
  • 2 bay leaves
  • 1 piece of galangal (about 1 cm, bruised)
  • 2 tablespoons sweet soy sauce
  • 1/2 teaspoon chicken stock powder
  • Salt to taste
  • Pepper to taste (ground finely)
  • Cooking oil for sautéing
  • Water as needed

Instructions:

  1. Prepare Ingredients:

    • Ensure all ingredients are ready before starting.
    • Wash the beef tendons thoroughly, then cut them into rectangular pieces about 1 cm each.
    • Thinly slice the shallots and garlic.
    • Slice the bird’s eye chilies, green chilies, red chilies, and tomato. Grind the pepper finely.
  2. Sauté Aromatics:

    • Heat enough cooking oil in a pan over medium heat.
    • Sauté the shallots and garlic until fragrant and slightly golden.
  3. Add Vegetables and Spices:

    • Add the sliced tomato, chilies, galangal, bay leaves, chicken stock powder, and ground pepper to the pan.
    • Stir well to combine the ingredients and release their flavors.
  4. Cook Beef Tendons:

    • Add the beef tendons to the pan and drizzle with sweet soy sauce.
