Ingredients:
- 500 grams of beef tendons (cut into rectangular pieces about 1 cm)
- 5 shallots
- 3 cloves of garlic
- 2 large green chilies
- 2 large red chilies
- 5 bird’s eye chilies
- 1 tomato
- 2 bay leaves
- 1 piece of galangal (about 1 cm, bruised)
- 2 tablespoons sweet soy sauce
- 1/2 teaspoon chicken stock powder
- Salt to taste
- Pepper to taste (ground finely)
- Cooking oil for sautéing
- Water as needed

- Wash the beef tendons thoroughly, then cut them into rectangular pieces about 1 cm each.
- Thinly slice the shallots and garlic.
- Slice the bird’s eye chilies, green chilies, red chilies, and tomato. Grind the pepper finely.
