Lele Asam Manis: Sweet and Sour Catfish Recipe

Ingredients

Ingredient Quantity
Fresh Catfish (Lele Segar) 1/2 kg
Water 180 ml
Sweet Soy Sauce (Kecap Manis) 3 tablespoons
Margarine or Oil 1 tablespoon
Oyster Sauce (optional) 1/2 teaspoon
Spice Paste:
Red Shallots (Bawang Merah) 6 cloves
Garlic (Bawang Putih) 5 cloves
Red Chili Peppers 4 (adjust to taste)
Candlenuts (Kemiri) 2
Salt 1 teaspoon (to taste)
Flavor Enhancer (optional) 1/2 teaspoon (to taste)
Sugar 1/2 teaspoon (to taste)

Instructions

  1. Prepare the Fish: Clean the catfish thoroughly and fry until cooked but not crispy. Drain excess oil.

  2. Make the Spice Paste: While the fish is frying, blend together the shallots, garlic, red chili peppers, and candlenuts until smooth.

  3. Sauté the Spice Paste: In a skillet, heat margarine over medium heat. Add the blended spice paste and sauté until fragrant.

  4. Add Sauces: Stir in the sweet soy sauce, oyster sauce (if using), and water. Mix well.

  5. Combine and Simmer: Once the mixture is aromatic, gently add the fried catfish to the skillet. Let it simmer, allowing the flavors to infuse into the fish. Adjust salt, flavor enhancer, and sugar to taste.

  6. Serve: Once the sauce has thickened and absorbed, remove from heat. Serve hot and enjoy!

This delightful dish brings together a balance of sweet and savory flavors, perfect for a family meal or special gathering. Enjoy your culinary adventure!
