Sweet and Spicy Chicken Wings (Asem-Asem Sayap Ayam)

Servings: 2-3

Ingredients:

  • Chicken:
    • 1/4 kg chicken wings or breast, cut into pieces
  • Spices and Aromatics:
    • 5 shallots
    • 3 garlic cloves
    • 2 red chili peppers (kriting variety)
    • 5 bird’s eye chilies
    • 1 tomato
    • 2 bay leaves
    • 1 thumb-sized piece of galangal
  • Seasoning:
    • Salt
    • Sugar
    • Sweet soy sauce (kecap manis)
    • Chicken bouillon or seasoning powder
  • Other:
    • Water
    • Vegetable oil
    • Vegetables:
      • 10 green beans (buncis)
      • 1 carrot
    • Fried shallots for garnish:
      • 5 shallots
      • 1 garlic clove

Instructions:

  1. Prepare Fried Shallots:

    • Start by making the fried shallots. Slice 5 shallots and 1 garlic clove thinly. Heat vegetable oil in a pan over medium heat and fry the shallots and garlic until golden brown and crispy. Drain and set aside.
  2. Sauté Aromatics:

    • In the same pan, add a bit more vegetable oil if needed. Sauté the finely chopped shallots, garlic, bay leaves, and galangal until fragrant and golden.
  3. Cook the Chicken:

    • Add the chicken pieces to the pan and stir-fry briefly to ensure they are evenly coated with the aromatics. Add the whole red chili peppers and bird’s eye chilies, and continue to cook until the chicken starts to brown.
  4. Add Vegetables:

    • Toss in the chopped green beans and carrot slices. Stir-fry until the vegetables begin to soften.
  5. Season and Simmer:

    • Season with salt, sugar, sweet soy sauce, and chicken bouillon or seasoning powder. Mix well to combine all the flavors. Pour in enough water to cover the ingredients. Bring to a boil.

    • Reduce the heat, cover the pan, and let it simmer until the chicken is cooked through and the vegetables are tender. Slice the tomato and add it to the pan just before serving. Adjust the seasoning to taste, balancing the sweetness, saltiness, and a hint of tanginess.
