Sweet and Spicy Beef Stir-Fry with Vegetables
Ingredients:
- 1/2 kg beef (cubed)
- 4 large tomatoes
- 1 oz red chili peppers
- 4 shallots
- 4 cloves garlic
- 1 cup all-purpose flour
- 2 carrots
- 1 oz green beans
- 2 sweet corn cobs
- A handful of fresh celery leaves
- 2 scallions
- Salt and seasoning (MSG) to taste
- Sugar to taste
- Oil for frying
Instructions:

Prepare the Beef:
- Begin by boiling the beef with a blend of shallots, garlic, and ginger. Season with salt and MSG. Cook until the beef is tender.
- Once tender, remove the beef from the pot and cut it into bite-sized pieces. Coat the beef pieces with flour, making sure to cover them evenly.

Fry the Beef:
- Heat oil in a pan and fry the floured beef pieces until they are crispy and golden brown. Once fried, set the beef aside.

Prepare the Sauce:
- Blend the tomatoes into a smooth puree and grind the red chili peppers into a fine paste.
- In a separate pan, sauté the shallots, garlic, and chili paste until they become fragrant.

Make the Stir-Fry Sauce:
- Add the tomato puree to the pan and season with salt, MSG, and sugar to taste. Allow the sauce to simmer until it thickens slightly.

Add the Vegetables:
- Cut the carrots, green beans, and sweet corn into bite-sized pieces. Add these vegetables to the sauce and cook until the vegetables are tender.

Combine and Finish:
- Add the crispy beef pieces to the pan and stir well to coat the beef with the sauce.
- Garnish with freshly chopped celery leaves and scallions for added flavor and freshness.

- Serve the sweet and spicy beef stir-fry hot, either on its own or with steamed rice.
