Sweet and Spicy Beef Stir-Fry with Vegetables

Ingredients:

  • 1/2 kg beef (cubed)
  • 4 large tomatoes
  • 1 oz red chili peppers
  • 4 shallots
  • 4 cloves garlic
  • 1 cup all-purpose flour
  • 2 carrots
  • 1 oz green beans
  • 2 sweet corn cobs
  • A handful of fresh celery leaves
  • 2 scallions
  • Salt and seasoning (MSG) to taste
  • Sugar to taste
  • Oil for frying

Instructions:

  1. Prepare the Beef:

    • Begin by boiling the beef with a blend of shallots, garlic, and ginger. Season with salt and MSG. Cook until the beef is tender.
    • Once tender, remove the beef from the pot and cut it into bite-sized pieces. Coat the beef pieces with flour, making sure to cover them evenly.
  2. Fry the Beef:

    • Heat oil in a pan and fry the floured beef pieces until they are crispy and golden brown. Once fried, set the beef aside.
  3. Prepare the Sauce:

    • Blend the tomatoes into a smooth puree and grind the red chili peppers into a fine paste.
    • In a separate pan, sauté the shallots, garlic, and chili paste until they become fragrant.
  4. Make the Stir-Fry Sauce:

    • Add the tomato puree to the pan and season with salt, MSG, and sugar to taste. Allow the sauce to simmer until it thickens slightly.
  5. Add the Vegetables:

    • Cut the carrots, green beans, and sweet corn into bite-sized pieces. Add these vegetables to the sauce and cook until the vegetables are tender.
  6. Combine and Finish:

    • Add the crispy beef pieces to the pan and stir well to coat the beef with the sauce.
    • Garnish with freshly chopped celery leaves and scallions for added flavor and freshness.
  7. Serve:

    • Serve the sweet and spicy beef stir-fry hot, either on its own or with steamed rice.
