Sweet and Spicy Gurame Fish

Ingredients:

  • 1 medium gurame fish (also known as gourami)
  • 1 yellow lime
  • 2 carrots, cut into cubes
  • Flour (as needed)
  • Cornstarch (as needed)
  • Cooking oil (for frying)
  • 1 egg white
  • For the Sauce:
    • 4 cloves garlic
    • 4 shallots
    • 1 onion
    • 3 ripe tomatoes
    • 3 tablespoons tomato ketchup
    • Sugar (to taste)
    • Salt (to taste)
    • Boiling water (as needed)
    • 5 red chili peppers

Instructions:

  1. Prepare the Fish:

    • Clean the gurame fish thoroughly, removing the gills and fins. Cut the fish into pieces according to your preference.
    • Marinate the fish with yellow lime juice for about an hour to infuse flavor and remove any fishy smell.
  2. Coat and Fry the Fish:

    • In a bowl, mix flour and cornstarch in a 3:1 ratio. Beat the egg white in a separate bowl.
    • Dip each piece of fish into the egg white, then coat with the flour-cornstarch mixture, ensuring it is well-coated.
    • Heat oil in a pan over medium heat. Fry the coated fish pieces until they are golden brown and crispy. Drain on paper towels to remove excess oil.
  3. Prepare the Vegetables and Sauce:

    • Finely chop the garlic and shallots. Roughly chop the onion and red chili peppers. Cut the tomatoes into wedges.
    • Boil the carrot cubes in water until they are half-cooked, then set aside.
    • In a pan, heat a little oil and sauté the garlic, shallots, and onion until they become translucent.
    • Add the tomatoes and cook until they start to break down. Pour in a little boiling water to create a sauce base.
    • Stir in the carrots, tomato ketchup, salt, and sugar. Mix well and let the sauce simmer until all ingredients are well combined and the sauce thickens. Adjust seasoning to taste.
  4. Assemble the Dish:

    • Arrange the fried fish pieces on a serving plate.
    • Pour the hot, flavorful sauce over the fish.
