Ingredients:
- 1 medium gurame fish (also known as gourami)
- 1 yellow lime
- 2 carrots, cut into cubes
- Flour (as needed)
- Cornstarch (as needed)
- Cooking oil (for frying)
- 1 egg white
- For the Sauce:
- 4 cloves garlic
- 4 shallots
- 1 onion
- 3 ripe tomatoes
- 3 tablespoons tomato ketchup
- Sugar (to taste)
- Salt (to taste)
- Boiling water (as needed)
- 5 red chili peppers

- Clean the gurame fish thoroughly, removing the gills and fins. Cut the fish into pieces according to your preference.
- Marinate the fish with yellow lime juice for about an hour to infuse flavor and remove any fishy smell.

- In a bowl, mix flour and cornstarch in a 3:1 ratio. Beat the egg white in a separate bowl.
- Dip each piece of fish into the egg white, then coat with the flour-cornstarch mixture, ensuring it is well-coated.
- Heat oil in a pan over medium heat. Fry the coated fish pieces until they are golden brown and crispy. Drain on paper towels to remove excess oil.

- Finely chop the garlic and shallots. Roughly chop the onion and red chili peppers. Cut the tomatoes into wedges.

- Add the tomatoes and cook until they start to break down. Pour in a little boiling water to create a sauce base.
- Stir in the carrots, tomato ketchup, salt, and sugar. Mix well and let the sauce simmer until all ingredients are well combined and the sauce thickens. Adjust seasoning to taste.
