Ingredients for Gujarati Kadhi

Ingredient Name Quantity

Gram Flour (Besan) 2 tablespoons
Turmeric Powder (Haldi) 1/4 teaspoon (optional)
Jaggery 1 tablespoon (crushed)
Salt To taste
Seasoning Ingredients
Cumin Seeds (Jeera) 1/4 teaspoon
Mustard Seeds (Rai/Kadugu) 1/4 teaspoon
Cinnamon Stick (Dalchini) 1-inch piece
Ginger (grated) 1 teaspoon
Green Chillies 2, slit
Ghee 1 tablespoon
Curry Leaves 1 sprig (torn)
Coriander Leaves (Dhania) 1 tablespoon (chopped)
Green Peas (Matar) 2 tablespoons (steamed, optional)

Preparation Time: 5 minutes

Cooking Time: 30 minutes

Total Time: 35 minutes

Yield: Serves 4

Instructions

  1. Prepare the Kadhi Mixture:
Begin by combining the yogurt (curd), gram flour (besan), grated ginger, slit green chillies, and crushed jaggery in a mixing bowl. Add 2 1/2 cups of water and whisk everything together until the mixture is smooth, ensuring there are no lumps.

  2. Boil the Kadhi:
Pour the kadhi mixture into a saucepan. Place it over medium heat and allow the kadhi to come to a gentle boil. Stir continuously to maintain a smooth and creamy consistency. This step is crucial as constant stirring ensures the kadhi achieves the perfect texture.

  3. Simmer for Flavor:
Once the kadhi begins to boil, reduce the heat to low and let it simmer for 5 to 10 minutes. This simmering process helps the flavors to meld together, while also eliminating any raw taste from the gram flour and spices.

  4. Prepare the Seasoning:
In a separate pan, heat the ghee on medium heat. Once the ghee is hot, add the mustard seeds and cumin seeds. Allow them to crackle and pop. Stir in the torn curry leaves, cinnamon stick, grated ginger, and slit green chillies. Let the spices cook for a minute to release their aroma.

  5. Combine and Final Cook:
Gradually add the prepared seasoning mixture into the simmering kadhi. Stir well and let the kadhi come to a boil again, allowing the flavors to blend together beautifully. Once it reaches a boil, turn off the heat.

  6. Finishing Touches:
Stir in the freshly chopped coriander leaves and, if using, the steamed green peas. These will add a refreshing touch and a pop of color to the kadhi.

  7. Serve:
Serve the Gujarati Kadhi hot, ideally paired with Khichdi and Batata nu Shaak, a popular combination known as Khichdi Kadhi. The mild flavors of the khichdi and the spiced warmth of the kadhi make a perfect match.

Tips for the Perfect Gujarati Kadhi

  • Adjust the sweetness and spice: Depending on your preference, you can adjust the amount of jaggery and green chillies to suit your taste. For a sweeter version, increase the jaggery. For more heat, add an extra green chilli or use red chilli powder.
  • Use fresh curry leaves: Fresh curry leaves add an authentic flavor that elevates the dish. If fresh ones arenโ€™t available, dried curry leaves will work, but the flavor wonโ€™t be as vibrant.
  • Green peas: Steamed green peas are optional, but they add texture and sweetness that complements the kadhi. You can also experiment by adding vegetables like spinach or bottle gourd (lauki).
