Sweet and Spicy Gurame Fish: A Simple Delight

- 1 kg Gurame fish (cleaned and cut into manageable pieces)
- Spice Paste:
- 7 shallots
- 2 garlic cloves
- Sliced Ingredients:
- 1 large onion
- Red chili peppers (to taste)
- Bird’s eye chilies (to taste)
- 1 stalk green onion
- 1 tomato
- 1 packet of fried fish seasoning
- 1 small bottle of sambal sauce (e.g., ABC brand)
- Soy sauce (to taste)
- Cooking oil
- Water (as needed)

Begin by thoroughly cleaning the Gurame fish. Cut the fish into two pieces if necessary to fit your frying pan. Rub the fish with the fried fish seasoning and let it marinate for a short time. Next, fry the fish in hot oil until it is crispy and cooked through. Once done, set the fish aside.

While the fish is frying, prepare the spice paste. Blend the shallots and garlic cloves into a smooth paste using a food processor or mortar and pestle.

Heat some cooking oil in a pan over medium heat. Sauté the sliced green onion, spice paste, and sliced ingredients (onion, red chili peppers, bird’s eye chilies, and tomato) until they start to soften and become aromatic.

Add the sambal sauce to the pan, adjusting the quantity according to your spice preference. Pour in a little water and add soy sauce to taste. Stir to combine and let the mixture simmer for a few minutes to meld the flavors.

Taste the sauce and adjust seasoning as needed. Gently place the fried fish into the sauce, turning it to ensure the fish is well-coated with the sweet and spicy sauce.
