Sweet and Spicy Indonesian Chicken

Sweet Chili Chicken (Ayam Cabe Manis)

Ingredients:

  • 3 pieces of chicken
  • Red curly chili peppers
  • Red bird’s eye chilies
  • Shallots
  • Garlic
  • Spring onions
  • Sweet soy sauce (kecap manis)
  • Soy sauce (kecap asin)
  • Salt
  • Seasoning (optional)

Instructions:

  1. Prepare the Chicken: Begin by washing and cleaning the chicken pieces thoroughly. Set aside.

  2. Boil the Chicken: In a large pot, bring water to a boil. Add a pinch of salt and the garlic cloves. Optionally, you can also use yellow seasoning for extra flavor. Once boiling, add the chicken pieces and cook until tender. After cooking, remove the chicken from the pot and drain well.

  3. Fry the Chicken: Heat oil in a frying pan over medium heat. Fry the boiled chicken pieces until golden brown and crispy. Remove from the pan and set aside.

  4. Prepare the Spice Mix: While the chicken is frying, blend the red curly chili peppers, red bird’s eye chilies, shallots, and garlic into a smooth paste.

  5. Cook the Spice Paste: In a separate pan, heat a little oil and sauté the spice paste until fragrant and well-cooked.

  6. Combine Chicken and Spice Mix: Add the fried chicken pieces to the pan with the spice paste. Stir well to coat the chicken with the spices.

  7. Add Liquids and Simmer: Pour in a small amount of water and allow the mixture to come to a boil.

  8. Season and Finish: Add a pinch of seasoning (if using), a generous amount of sweet soy sauce (kecap manis), a small amount of soy sauce (kecap asin), and finely chopped spring onions. Stir everything together and cook until the sauce reduces and coats the chicken evenly.

  9. Serve: Once the sauce has thickened and the chicken is well-coated, remove from heat. Serve the Sweet Chili Chicken hot, garnished with additional spring onions if desired.
