Ingredients:
- 250 grams chicken, cut into cubes
- 7 bird’s eye chilies
- 1 red chili
- 1 clove garlic
- 3 shallots
- 1 tomato
- 1 teaspoon shrimp paste
- 2 cm ginger, sliced
- 4 cm galangal, sliced
- 3 bay leaves
- Brown sugar, to taste
- Granulated sugar, to taste
- Salt, to taste
- Oil, for frying
