Ayam Pedas Manis (Sweet and Spicy Chicken)

Ingredients:

  • 250 grams chicken, cut into cubes
  • 7 bird’s eye chilies
  • 1 red chili
  • 1 clove garlic
  • 3 shallots
  • 1 tomato
  • 1 teaspoon shrimp paste
  • 2 cm ginger, sliced
  • 4 cm galangal, sliced
  • 3 bay leaves
  • Brown sugar, to taste
  • Granulated sugar, to taste
  • Salt, to taste
  • Oil, for frying

Instructions:

  1. Prepare the Chicken: Wash the chicken thoroughly and cut it into bite-sized cubes. Set aside.

  2. Prepare the Spice Paste: Blend or grind the bird’s eye chilies, red chili, garlic, shallots, and tomato into a smooth paste. Add the shrimp paste, ginger, and galangal.

  3. Cook the Spice Paste: Heat oil in a large skillet over medium heat. Add the spice paste along with the sliced galangal. Sauté until fragrant and the oil starts to separate from the paste.

  4. Add Aromatics: Add the bay leaves, salt, and both types of sugar to the skillet. Adjust the seasoning to your taste.

  5. Cook the Chicken: Add the cubed chicken to the skillet. Stir to coat the chicken with the spice paste. Cook, stirring occasionally, until the chicken is cooked through and well-coated with the spices.

  6. Simmer and Serve: Allow the chicken to simmer for a few more minutes to absorb the flavors. Adjust seasoning if needed. Serve hot with steamed rice or your favorite side dishes.
