Spicy Sweet Fried Eggs (Telor Ceplok Saos Pedas Manis)
Ingredients:
- 4 chicken eggs (adjust the quantity according to your preference)
- 5 ripe red tomatoes
- 8 red curly chilies
- Sugar to taste
- 5 shallots
- 3 cloves of garlic
- Salt to taste
Instructions:
- 
Fry the Eggs: - Heat a little oil in a frying pan over medium heat.
- Fry the eggs one by one until the whites are set but the yolks are still runny, seasoning each with a pinch of salt as they cook. Set aside the fried eggs on a plate.

Prepare the Sauce: Related Articles- In a blender or food processor, combine the tomatoes, red curly chilies, 2 shallots, 1 clove of garlic, sugar, and salt. Blend until smooth to create the sauce base.
- Alternatively, if you prefer a quicker option, you can use pre-made chili sauce.

Cook the Sauce: - In the same frying pan, add a bit more oil if needed, and sauté the remaining shallots and garlic, finely sliced, along with the sliced red curly chilies. Cook until fragrant.
- Pour the blended sauce mixture into the pan. Add a little water and stir well. Bring the sauce to a boil, then lower the heat and let it simmer for a few minutes. Taste the sauce and adjust the seasoning if needed.

Combine Eggs with Sauce: - Carefully place the fried eggs into the simmering sauce. Stir gently to coat the eggs with the sauce. Allow the sauce to reduce slightly and absorb into the eggs, creating a rich and flavorful dish.
