Instructions

  1. Prepare the Dough
Begin by making the pizza dough. In a large mixing bowl, combine the all-purpose flour, salt, sugar, and active dry yeast. Gradually add the milk and lukewarm water, mixing to form a sticky dough. Knead the dough for about 5 minutes until it comes together.

  2. Knead the Dough
Lightly grease your hands with oil, and transfer the dough to a flat surface. Knead the dough for about 10 minutes until it is smooth and elastic. This step is essential for the dough to rise well and become soft.

  3. Let the Dough Rise
Once the dough is kneaded, shape it into a smooth ball and place it in a deep bowl. Cover the bowl with a damp cloth and set it aside in a warm place. Let the dough rise for 90 minutes, or until it has doubled in size. If it doesn’t rise within 90 minutes, wait an additional 30 minutes.

  4. Prepare the Tikka Masala Marinade
While the dough is resting, prepare the tikka masala marinade. In a mixing bowl, combine hung curd (Greek yogurt) and gram flour, and mix until smooth. In a pestle and mortar, grind the ginger, garlic, and kasuri methi leaves into a coarse paste. Add the roasted and ground fennel seeds, ajwain, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and chaat masala powder to the yogurt mixture. Mix well to combine.

  5. Marinate the Paneer
Cut the paneer into cubes (about 1-½ inch in size). Add the paneer cubes to the marinade, ensuring they are fully coated. Cover the bowl and let the paneer marinate for 30 minutes to 1 hour, or even overnight for deeper flavor.

  6. Cook the Paneer
Heat a skillet over medium heat, add a little oil, and cook the marinated paneer cubes. Flip the pieces occasionally so that they cook evenly on all sides. Once done, remove the paneer from the pan and set aside.

  7. Cook the Vegetables
In the same skillet, add a little more oil and sauté the red bell pepper and pineapple pieces for 5 minutes, just until they are slightly softened and caramelized. Remove from the skillet and set aside.

  8. Assemble the Pizza
Once the dough has risen, punch it down and knead it again for about 30 seconds. Divide the dough into 3 equal-sized balls. Take one ball and flatten it into a round shape on a lightly oiled surface, pulling the edges with your fingers to form a pizza base. Use a fork to poke holes into the dough to help it cook evenly.

  9. Cook the Pizza Base
Heat a flat skillet or tawa over low heat and generously grease it with oil. Sprinkle some semolina onto the pan and rotate to coat the base and edges. Place the rolled-out pizza dough in the center of the pan and cook it for about 10 minutes, or until it is lightly browned and cooked through on the bottom.

  10. Add the Toppings
Once the base is cooked, spread pizza sauce evenly on top. Add a layer of pineapple, paneer tikka, and sautéed red bell peppers. Sprinkle the grated mozzarella cheese and any additional cheese over the toppings.

  11. Cook the Pizza
Cover the pan with a lid and let the pizza cook for another 5-7 minutes, until the cheese has melted and the base is lightly golden brown.

  12. Serve
Once the cheese has melted and the crust is perfectly cooked, transfer the pizza to a serving plate. Cut into slices using a pizza cutter and serve hot.
