Spicy Canned Sardines Recipe
Ingredients:
- 1 can of ABC Green Sardines
- Sweet chili sauce (to taste)
- Salt (to taste)
- 2 tablespoons of white sugar
- 2 shallots
- 2 cloves of garlic
- 1 stalk of lemongrass (optional, for added flavor)
- 4 bird’s eye chilies (adjust to taste)
- Cooking oil
- Water (as needed)
Instructions:
-
Prepare the Aromatics: Peel and thinly slice the shallots and garlic. If preferred, lightly crush the shallots and garlic to release more flavor. Chop the bird’s eye chilies to your desired level of spiciness. Optionally, slice the lemongrass stalk into thin rings.
-
Sauté the Ingredients: Heat a generous amount of cooking oil in a pan over medium heat. Add the shallots, garlic, and bird’s eye chilies (and lemongrass, if using). Sauté for about one minute, or until the aromatics are fragrant and lightly golden.
-
Add the Sardines: Gently add the canned sardines to the pan, being careful not to break them apart too much. Pour in a small amount of water to help deglaze the pan and mix the ingredients. Stir gently to combine.
-
Season the Dish: Add the white sugar and salt to taste. Stir well to ensure the seasoning is evenly distributed.
-
Incorporate the Sweet Chili Sauce: Pour in the sweet chili sauce, adjusting the amount based on your preference for sweetness and spiciness. Mix thoroughly.
-
Final Adjustments: Taste the dish and adjust the seasoning as necessary, adding more salt or sugar if needed.
-
Serve: Once the sardines are heated through and the flavors are well combined, remove the pan from the heat. Serve the spicy sardines hot, either on its own or with steamed rice.
Enjoy this quick and flavorful dish that perfectly balances spiciness, sweetness, and savory notes!
