Spicy Sweet Soy Beef (Daging Sapi Kecap Pedas)
Ingredients:
- 1/2 kg beef (cubed)
- 2 tablespoons oyster sauce (such as Saori)
- 6 tablespoons sweet soy sauce
- To taste: black pepper, salt, brown sugar
- To taste: beef stock or broth
- Ground Spice Mix:
- 10 shallots
- 8 cloves garlic
- 2 teaspoons coriander seeds
- 4 candlenuts
- 12 bird’s eye chilies
- 5 red curly chilies

Prepare the Beef:
- In a large pot, bring water to a boil. Add the beef cubes and a few bay leaves. Season with salt and cook until the beef is tender. Remove the beef and set aside.

Cook the Spice Mix:
- Heat a bit of oil in a skillet over medium heat. Add the ground spice mix: shallots, garlic, coriander seeds, candlenuts, bird’s eye chilies, and red curly chilies. Sauté until fragrant and the shallots and garlic turn golden brown.

Combine Beef and Spices:
- Add the cooked beef cubes to the skillet with the sautéed spices. Stir well to ensure the beef is evenly coated with the spice mixture.

Add Sauces and Simmer:
- Pour in the beef stock, and bring the mixture to a simmer. Let it cook until the stock begins to reduce and thicken slightly.

Season the Dish:
- Stir in the sweet soy sauce and oyster sauce. Season with salt, black pepper, and brown sugar to taste. Continue to simmer until the sauce has thickened and the beef is well-coated with the flavorful sauce. The sauce should not completely dry out; it should be slightly saucy.

Final Adjustments:
- Taste and adjust seasoning if necessary. Once the beef is tender and well-coated with the sauce, remove from heat.
