Sweet and Spicy Bean Sprouts with Tofu
Ingredients:
- 1 1/2 handfuls of bean sprouts
- 5 pieces of tofu, cut into cubes
- 6 shallots
- 2 cloves of garlic
- 6 red chilies
- Palm sugar, to taste
- Oyster sauce, to taste
- Royco seasoning, to taste
- Sweet soy sauce, to taste
- Water, as needed
Instructions:

Prepare the Tofu: Heat oil in a pan and fry the tofu cubes until they are half-cooked and golden. Remove and set aside.

Sauté Aromatics: In the same pan, add a bit more oil if necessary. Sauté the shallots and garlic until fragrant and translucent.

Add Chilies and Seasonings: Slice the red chilies and add them to the pan. Stir-fry for a minute. Then, incorporate the palm sugar, oyster sauce, sweet soy sauce, and Royco seasoning. Stir well to combine and allow the flavors to meld.

Combine Ingredients: Add the fried tofu cubes to the pan and stir to coat them with the seasoning mixture. Next, add the bean sprouts and mix thoroughly.

Add Water: Pour in just enough water to create a bit of sauce. Stir to ensure everything is well-mixed.

Simmer: Cover the pan with a suitable lid and let it simmer until the bean sprouts are tender and the tofu has absorbed the flavors. Stir occasionally.
