Asem Asem Ayam Recipe

Ingredients:

  • 250 grams chicken meat (boneless)
  • 6 small carrots
  • 5 green beans
  • 5 shallots
  • 3 cloves garlic
  • 3 red curly chilies
  • 5 bird’s eye chilies
  • 1 tomato
  • 2 bay leaves
  • 1 piece of galangal (about 1 inch)
  • Tamarind paste (to taste)
  • Soy sauce (to taste)
  • Palm sugar (to taste)
  • Salt (to taste)
  • Sugar (to taste)

Instructions:

  1. Prepare the Chicken: Begin by cleaning the chicken thoroughly and boiling it until tender. Once cooked, drain and discard the cooking water.

  2. Sauté Aromatics: In a large pan or wok, heat a small amount of oil over medium heat. Add the bay leaves and galangal, cooking until fragrant. Next, add the sliced shallots, garlic, red curly chilies, and bird’s eye chilies. Sauté until the spices are softened and aromatic.

  3. Combine Ingredients: Add the cooked chicken to the pan, stirring briefly to combine with the aromatics. Pour in enough water to cover the chicken. Stir well.

  4. Add Vegetables and Seasonings: Incorporate the sliced carrots and green beans into the pan. Season with soy sauce, palm sugar, tamarind paste, salt, and sugar. Adjust the seasonings to taste, ensuring a balance of sweet, sour, and savory flavors.

  5. Simmer: Allow the mixture to come to a boil, then reduce the heat and let it simmer until the vegetables are tender and the flavors meld together.

  6. Finish with Tomato: Slice the tomato and add it to the pan. Stir gently and cook for a few more minutes until the tomato is softened but not completely dissolved.
