Ingredients:
- 1/2 kg Gembung fish (or any preferred fish)
- For the seasoning:
- 4 red shallots
- 2 cloves garlic
- 2 large red tomatoes
- 5 green long chilies (or substitute with large green chilies)
- As desired: Bird’s eye chilies (adjust to taste)
- Tamarind, lime, or sambal (as needed)
- Salt
- Sugar
- Flavor enhancer (optional)

Begin by cleaning the gembung fish thoroughly under cold running water to remove any impurities. Once cleaned, place the fish in a stainless-steel or steaming dish. -
Season the Fish:
Rub the fish with salt, sugar, and a flavor enhancer (if using) to ensure it absorbs the seasoning. Allow it to sit for a few minutes to marinate. -
Prepare the Aromatics:
- Slice the red shallots and garlic thinly.
- Cut the green chilies into rings and, if using, chop the bird’s eye chilies to your desired heat level.
