Experience the delightful balance of sweet and tangy with this Sweet and Sour Tenggiri, a dish that beautifully combines the richness of Tenggiri fish with a flavorful sauce. Perfect for a quick, satisfying meal, this recipe infuses traditional flavors with a touch of modern flair.

Ingredients:

  • 4 pieces Tenggiri fish (Mackerel)
  • For the Aromatics:
    • 2 cloves garlic
    • 1 large chili pepper
    • 1 small tomato
    • 1 cm ginger
  • For the Sauce:
    • 3 tablespoons tomato sauce
    • A splash of soy sauce
    • Sugar and salt to taste
    • Optional: flavor enhancer (e.g., chicken bouillon)
    • 1/2 teaspoon tapioca flour, dissolved in water

Instructions:

  1. Prepare the Fish:

    • Heat oil in a pan and fry the Tenggiri fish until it turns golden brown. Set aside.
  2. Cook the Aromatics:

    • In the same pan, add a little more oil if needed. Sauté the garlic, ginger, and large chili pepper until fragrant. Add a splash of water to help release the flavors.
  3. Make the Sauce:

    • Add the tomato sauce and soy sauce to the pan. Season with sugar and salt to taste. Stir well to combine.
  4. Add the Vegetables:

    • Chop the small tomato and add it to the pan. Stir everything together and add a bit more water if needed. Continue to cook until the mixture is aromatic.
  5. Combine and Thicken:

    • Gently place the fried fish back into the pan, stirring to coat the fish with the sauce. Add the tapioca flour mixture and stir until the sauce thickens to your liking.
  6. Finish and Serve:

    • Once the sauce has thickened and the fish is well-coated, turn off the heat. Your Sweet and Sour Tenggiri is now ready to be served.
