Instructions

  1. Prepare the Poha: Begin by grinding the poha in a mixer grinder until you achieve a coarse powder. Be cautious not to grind it too finely, as the texture should remain a bit grainy.

  2. Moisturize the Poha: Transfer the ground poha to a mixing bowl. Sprinkle around 1/4 cup of water over it and gently mix with your hands. Let it sit for 10 minutes to allow the poha to absorb the moisture without becoming too soft or mashed. After the resting time, sprinkle a bit more water if needed, and mix gently to ensure an even texture.

  3. Prepare Jaggery Syrup: In a microwave-safe deep container, add the powdered jaggery and just enough water to immerse it. Microwave for 2 minutes to dissolve the jaggery. Once melted, strain the mixture to remove any impurities. Return the strained jaggery syrup to the microwave, heating for an additional 6-8 minutes until it reaches a slightly thickened consistency.

  4. Fry Cashews and Coconut: In a small skillet, heat the ghee and fry the cashew nuts until they turn golden brown. Add the grated coconut and sauté briefly until it becomes aromatic.

  5. Combine Ingredients: In a large mixing bowl, combine the moistened poha, jaggery syrup, cardamom powder, fried cashews, and grated coconut. Stir well to ensure the flavors are evenly incorporated.

  6. Final Heating: Microwave the entire mixture for an additional 2 minutes to bring all the ingredients together, allowing the flavors to meld beautifully.

  7. Serve: Serve the Aval Puttu warm, garnished with additional cashews if desired, as a traditional sweet treat.
